“We’re making Seitan today; fast and easy in the Instant Pot! If you’re not familiar with seitan, it’s a meat substitute…a dense, chewy vegan protein made from wheat gluten. It has an extremely impressive nutritional profile at nearly 20gr of protein per 3 oz portion! It’s low in carbs, calories, fat, saturated fat and cholesterol! It’s often compared in taste, texture and nutrition to lean animal meats, but, is much healthier, as you won’t be ingesting cancer-causing carcinogenic HCAs. And…it’s crazy-easy to make! Don’t be intimidated…here’s how to make Vegan Instant Pot Seitan!
Gather your favorite spices and dust off your Instant Pot and let’s get to making some delicious Seitan! I ordered my Vital Wheat Gluten online and received it lightening-fast, but it can be found in some grocery stores. I took the easy route and ordered it. 🙂 Keep the vital wheat gluten in your freezer and just pull it out whenever you want to make a fresh batch.
All you do is combine all the ingredients, knead for a couple of minutes, cut into pieces and add to your Instant Pot with some water and cook on manual for 16 minutes. Couldn’t be much easier!
Doesn’t it look just like cooked chicken breast? The combined spices give it a umami/savory mouth-watering flavor, and the texture is surprisingly close to chicken, slightly chewier, but 100% healthier and cruelty free!
I’m not gluten sensitive, so wheat gluten is suitable for me as a protein source. When I’m wanting something besides tofu, tempeh, beans or lentils etc; seitan is an excellent protein alternative.
Seitan will take on the flavor of your seasonings, so use your favorites! And it isn’t tough or rubbery when cooked in the Instant Pot.
When I want a more distinct chicken flavor, I’ll use this seasoning that tastes like chicken soup! Organic Real Salt, Natural Season Salt
Seitan can be used countless ways, here’s a few ideas:
In a stir fry with your favorite vegetables
Fajitas in tortilla wraps
With veggies in lettuce wraps
Taco Salad
Gyros
Buddha Bowls
Curries
Veggie Dumplings
Chili
Stews
Kabobs
Fried Rice
Pilafs
BBQ sandwiches
Pho noodle soup
The possibilities are limitless!
Store leftovers in a tightly covered container in the fridge for up to 10 days, or in the freezer for up to 3 months.

- 1 cup vital wheat gluten
- ¾ cup water
- 1 tsp smoked paprika
- 1 tsp reduced sodium all purpose seasoning
- 1 tsp garlic powder
- 1 tbl nutritional yeast
- Dash of black pepper
- 2 dashes of liquid smoke
Instructions
- Mix dry ingredients together.
- Add water and liquid smoke.
- Mix until it forms a ball.
- Knead for 2 minutes.
- Cut into small pieces, they will expand as they cook.
- Add to Instant Pot, cover pieces with 1 cup water.
- Cook on manual high pressure for 16 minutes.
- Carefully release pressure, using quick release method.
- Store leftovers in a tightly covered container and keep in the fridge for up to 10 days, or in the freezer for up to 3 months.
